Holiday Applesauce Cake Recipe

This season bring a little extra cheer to your holiday dessert table with this easy to make applesauce cake:

Ingredients:

1 cup applesauce
7/8 cup brown sugar
½ cup canola/vegetable oil

1 ¾ cups plain flour
1 teaspoon baking soda
½ teaspoon salt
1 teaspoon cinnamon
½ teaspoon powdered cloves or mixed spice

½ cup raisins
½ cup chopped walnuts or pecans

½ cup glace cherries (cut in half)
½ cup whole walnut or pecan segments

 

1) Preheat oven to 350º F/180º C. Butter and lightly flour a 9-inch baking pan.

2) Mix the first three ingredients together in a large bowl.

3) In a separate bowl, sift together the next five ingredients.

4) Add raisins and chopped walnuts or pecans to the bowl of sifted ingredients and stir through.

5) Add the applesauce mix to the flour mix. Thoroughly fold the wet and dry ingredients together, then spoon into your baking pan.

6) Decorate the top of the cake with glace cherries and whole walnut/pecan segments.

7) Bake for 40 minutes or until a wooden skewer inserted into the center of the cake comes away clean.
